Grandma Knupp’s Kohlupkies

1 head cabbage

1 pound plain sausage

1 pound ground beef

2 onions chopped

1 cup rice (uncooked)

1 egg

1 quart stewed tomatoes

Juice of one lemon

½ cup celery

1 tsp. Sugar

1 tsp. Parsley, minced or dried

salt and pepper

 

Boil head of cabbage until the leaves are soft through the middle. Not too soft. Mix together pork, beef, 1 onion, rice, egg and some salt in a large bowl. In a saucepan, combine tomatoes, celery, sugar, parsley, lemon juice and other onion that has been sautéed in butter. Bring to a boil and remove from heat.  In a large roaster, put a small amount of tomato mixture in bottom then begin removing whole cabbage leaves from cabbage. Put equal amounts of meat mixture in each leaf (about 2 to 3 heaping tbls.), fold in ends and roll up. Place in roaster. Leaves should be tucked in under so they do not come loose. Pour the rest of tomato mixture over rolls. Cover and bake at 350º until done. Check after 45 minutes.
