Nannies Irish Soda Bread

3 cups sifted flour
2/3 cup sugar
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon of salt
1½ cups raisins
1 tablespoon of caraway seed
2 beaten eggs
1 3/4 - 2 cups of milk
2 tablespoons melted shortening
Sift together flour, sugar, powder, soda and
salt. Stir in raisins and caraway seeds. Combine eggs, milk and shortening and
add to dry ingredients just until flour is moistened. Turn batter out into a
tall 9" round pan (Mom's recipe say's ...or a 5¼" x 9½" loaf
pan, but I don't ever remember square soda bread). Bake at 350° for one hour.
