Western Ranch Dinner

1 cut up frying chicken

1 (14 ½ oz.) can Evaporated Milk

Bisquick

1 (No. 2 ½) can cling peaches in heavy syrup

2 teas. salt

¼ teas. pepper

2 teas. paprika

½ cup shortening

 

Read entire recipe before beginning. Heat oven to 425°. Dip chicken pieces in ½ cup undiluted milk then in a mixture of 1 cup bisquick, salt, pepper, paprika. Melt shortening in a 13x9 ½x2 pan (not glass) in oven. Add the chicken skin side down and bake 50 to 60 minutes.

 

Meanwhile make bisquick drop biscuit dough using diluted pet milk. Move chicken to one side of pan. Drain peach halves arrange on chicken. Spoon biscuit dough onto other side of pan. Bake 15 minutes more.

 

Remove food to hot plates. For Gravy, blend ¼ cup bisquick mixture saved from dipping into drippings in pan or just use fresh. Stir in gradually 1 cup peach juice and water. Boil two minutes. Stir in 1 cup pet milk, heat, but do not boil. Add salt and pepper. Serve with mashed potatoes. Very yummy and filling.
